Realizing dripless thawing with DENBA
High-quality dripless thawing is possible in a regular refrigerator equipped with DENBA+. With DENBA thawing, the food is thawed simultaneously and evenly from the surface to the center, minimizing the destruction of cell membranes. In addition to shorter thawing time, the refrigerator can still be used as usual, improving work efficiency.
Even if sashimi is cut and arranged in advance or meat is sliced ahead of time, freshness and visual appeal are maintained until served to customers.
Furthermore, it helps prevent issues such as discoloration, drying, deformation, and sticking of ingredients.
Point 1
Greatly reduces the outflow of drip and umami components.
Point 2
Prevents weight loss, leading to improved profitability.
Point 3
Minimizes quality deterioration caused by thawing.
Point 4
With DENBA’s extremely low frequency (ELF) technology, food can be thawed while maintaining uniform temperature between the surface and the center.
Compared to conventional thawing methods and specialized equipment, this allows thawing without degrading the quality, preserving the food in a fresh state.
Furthermore, drip loss is reduced by up to 95 percent, significantly improving quality retention and reducing food waste.

Improved grilled meat quality and reduced cooking loss
The difference is obvious from the drip that appears when grilling
As previously explained, DENBA thawing significantly reduces drip and the loss of umami during thawing, helping to reduce weight loss. This benefit also appears when the meat is grilled.
Normally, some drip occurs during grilling as well, and much of it is caused by poor-quality thawing. If drip comes out while grilling, it not only affects the appearance and flavor but also causes the meat to shrink, reducing the actual edible portion.
Even a small difference per slice can lead to a major impact in all-you-can-eat restaurants where large quantities of meat are consumed. This is why major Japanese yakiniku (grilled meat) restaurant chains have started introducing DENBA.
Note: Yakiniku is a Japanese style of grilling thin slices of meat, often served in buffet-style restaurants where customers grill their own food at the table.
